Yeah, they didn't go as into detail as I would have hoped for the Outbreak games, but they did spend a little more time in the likes of Gaiden, and that actually makes me want to play Gaiden.....

I always thought the Outbreak games were considered non-canonical to the main series?

Pretty much, there are things that fit really well, but on the whole they are side stories, like the one major thing that makes them non-canon is the ending, I am sure you remember the way Raccoon City was destroyed in RE3, that one had a single nuke or whatever, while Outbreak showed several rockets, comletely different....

I doubt that, if they wanted the numerous rockets to replace the single nuke, then they would have done that in UC, which even though it mixes scenes from RE3 as well as Outbreak in a type of montage at the end of the Raccoon's Destruction Scenario, then they would have done that with the scene where you see a single missile right before that montage.
