Like entire soundtrack? Defintely RE2. Hopefully they don't change it too much when remaking it. It's the only soundtrack I actually have on CD.

End credits after beating A and B scenarios...and when the Super Tyrant appears as a boss battle (I always liked to call him Super Tyrant)

The aforementioned "Where's Wesker" and the Laboratory from RE1. I also like the Police Station Main Hall from RE2 because it's features in an episode of Spaced (http://www.imdb.com/title/tt0706382/?ref_=ttep_ep3).
